The Art of Making Indonesian ‘Kopi Tubruk’ like a Barista
Kopi Tubruk is a traditional Indonesian brewing method that has been enjoyed by coffee lovers for generations. Its simplicity and bold flavor make it a favorite among those who appreciate the rich taste of coffee. While it may seem like a straightforward process, there are some techniques that baristas use to elevate the flavors and create a truly exceptional cup of Kopi Tubruk.
Firstly, it’s important to start with high-quality coffee beans. Look for beans that are freshly roasted and have a rich aroma. Arabica beans are commonly used for Kopi Tubruk due to their smooth and balanced flavors. Experiment with different single-origin beans or blends to find the one that suits your taste preferences.
Next, grind the coffee beans to a medium-coarse consistency. This allows for a balanced extraction of flavors during the brewing process. Using a burr grinder is recommended to achieve a consistent grind size.
To make the coffee, you’ll need a traditional Indonesian coffee pot called a ‘sangkar’ or a small heat-resistant glass. Begin by measuring the desired amount of coffee grounds based on your preference and the size of your brewing vessel. As a starting point, a ratio of 1:15 (1 part coffee to 15 parts water) is commonly used.
Heat the water to approximately 95-96°C (203-205°F) for optimal extraction. Slowly pour the hot water over the coffee grounds, allowing them to bloom. Give it a gentle stir to ensure even saturation.
Now comes the technique that sets apart a barista-made Kopi Tubruk. Instead of simply letting the coffee grounds settle to the bottom of the cup, a skilled barista will agitate the mixture by gently stirring it in a circular motion. This helps to extract more flavors and intensify the coffee’s richness.
Let the coffee steep for about 3-4 minutes to ensure a proper extraction. The longer the steeping time, the stronger the flavor will be. However, be mindful not to oversteep as it may result in a bitter taste.
To enjoy the Kopi Tubruk, simply pour the brewed coffee into a cup, allowing the coffee grounds to settle at the bottom. Some people prefer to use a small strainer to filter out any remaining grounds, but this step is optional.
Savor the robust and full-bodied flavors of your homemade Kopi Tubruk. Feel free to customize it to your taste by adding sugar or condensed milk if desired. Remember, the beauty of Kopi Tubruk lies in its simplicity and the bold flavors it offers.
So, the next time you’re craving a cup of Indonesian coffee, channel your inner barista and master the art of making Kopi Tubruk. With attention to detail and a few simple techniques, you can enjoy a delicious and authentic cup of coffee that pays homage to the rich coffee culture of Indonesia.
